Preserved Lemons

Our preserved lemons are a blend of lemons, salt and distilled water aged over six weeks for the perfect texture and flavor. This method encourages the lemon to lose its sharpness and creates a unique flavor and silken texture that is characteristic is Moroccan cooking.

Once the jar has been opened, preserved lemons will keep in the refrigerator for up to a year.

Harissa Paste

Our Harissa Paste is made with chilies vine-ripened to peak flavor perfection and flown to our facility to make each hand-crafted batch from scratch. But, when the chilies run out, so does the Harissa! We use the same recipe that the Zamour tribe of North Africa has passed down from generation to generation (thank you, Grandma!). Fresh chilies? Yes! Fresh garlic? Yes! Preservatives or additives? Ewww! No! That isn't very authentic.

But: what is Harissa?

Harissa,a fiery paste, is popular throughout North Africa. In Morocco, it is served as condiment or dip at the table in a small dish with a spoon. Harissa Paste is often stirred into tagines and couscous to emit its distinct chili taste and intense slow burn. It pairs well with all meats - chicken, beef and lamb - for grilling or roasting. Soups and stews are given a little kick up in flavor by adding as little as a teaspoon. In Tunisia and Algeria, it is often stirred into salads and cooked vegetable dishes to give a characteristic red color. We recommend adding to casseroles, saffron-flavored fish soups and stews. Add as a base for poached eggs. Use in your favorite recipe or as a hot sauce to spice up your favorite foods (such as scrambled eggs).

Zahtar Spice Blend is a combination of Thyme, Sumac, and Sesame Seeds. Do not confuse this for Za'atar - the arabic word for thyme. There are many different blends called Zahtar, but this blend is very common in the Middle East (especially Jordan), Turkey and North Africa.

This versatile spice blend is commonly used is breads but works well with chickens, meats and fish. Our favorite way to use Zahtar is to mix it with Olive Oil to create a dip for a fresh, warm baguette. Add it to your hummus for an extra zing.

High quality Sumac should be a bright, deep red color (as opposed to brown and dull). Zamouri Spices brings you the best quality we could find. It is excellent as a salt substitute or for people who are looking to control the salt content in their diet. It has a light salty, lemony flavor.

Sumac is a very popular condiment in Turkey and Iran, where the ground fruits are liberally sprinkled over rice. Mixed with freshly cut onions, it is frequently eaten as an appetizer. Sumac mixed with strained yogurt makes a wonderful light sauce. It may also be added to marinades, salad dressings or rubbed on meats prior to grilling. We love it sprinkled over the top of foods before serving - especially hummus. It's berry, lemony flavor makes it a good substitute for lemon and an excellent salt replacement.

To prepare Merguez Sausages you will need:

1 and 1/2 lb. lamb meat (ground, if possible)

5 to 6 Tbsp of Merguez Spice Blend.

Grind the meat in a meat grinder or food processor.

Mix well with remaining ingredients and stuff into sheep casing using a sausage stuffer (you do not need to stuff into sheep casings, you can just make small patties). Link the sausages by spinning every other one until the sausages fill the casings firmly. Cover it and let it sit in the refrigerator for one day. Grill over moderate heat until just cooked through. Serve hot with pita bread and your favorite salad.

Kefta Spice Mix

Also known as Kafta, Kofta or Kufta.

Kefta Spice Blend is the spice mixture you'll needed to prepare the famous Moroccan Meatball Tagine. You can also use the blend to make some delicious hamburgers. Excellent with any ground beef or lamb recipes.

Ingredients: Cayenne, coriander, cumin, garlic, marjoram, paprika, pepper, spearmint, and more.

To prepare Kefta (Moroccan Meatball) Tagine you'll need: 1 lb lamb or beef freshly ground, 1 grated onion, 2 crushed garlic cloves, bunch of cilantro freshly chopped, several mint leaves chopped, 1 egg beaten, and 2 Tbsp of Kefta Spice Blend.

Mix all ingredients with your hand and knead to make a homogenous paste. Cover for 15 minutes. From the mixture, roll into small 1-inch balls.

Heat the oil in a deep frying pan; drop the meatballs into the sizzling oil and deep fry until golden (1 - 2 minutes of high heat). Chop a second onion and separately saute until golden in a frying pan with 1 tsp of the Kefta Spice Mix. Place the caramelized onions and the fried meatballs in a cooking Tagine. Add 1/2 cup of water and cook on a low/medium heat for 10-15 minutes.

Moroccan Orange Blossom Water is made from the distillation of the flowers of the orange. It originated in the Middle East and was brought to North Africa by the Arab traders.

Orange blossom water has a stronger flavor than rosewater and should be used sparingly so that the other flavors in the dish are not overwhelmed. Add a few drops to a mixed green salad or fruit, or use in lamb, chicken, or rice dishes made with almonds, apricots, figs, pears, or dates. Orange Blossom Water is used to flavor beverages as well.

To prepare Kebabs you’ll need:

2lb minced lamb.
1 large onion chopped.
2in piece ginger chopped.
2 garlic cloves crushed.
1 green chilli chopped.

1 tbsp oil.
3 TBSP of Kebab Spice Mix.

Put all ingredients except the yogurt and oil, into a food processor or blender and process until the mixture binds together. Spoon into a bowl and leave to marinate for 1 hour. Divide the mixture into 8 equal portions with lightly floured hands and mold into sausage shapes, thread onto skewers and chill. Brush the kebabs lightly with the yogurt and oil, and cook under a hot grill for 8-10 mins, turning occasionally, until brown all over.

1 Tablespoon Raw Honey
Enough Whole Milk for the consistency you prefer

Mix in bowl. Apply to face and neck. Let sit for 10 to 20 minutes. Apply warm washcloth and rinse. Pat dry.

Tea ~Green Temple of Heaven Tea

Temple of Heaven Green Gunpowder Pinhead Tea is the highest quality tea in our opinion. It is the Moroccan's favorite type of tea to make the traditional Moroccan Mint Tea. It is called Pinhead Gunpowder Tea because of the small, delicate pellets, which are much smaller than the standard leaf of a gunpowder green tea.
