Moroccan Salad with Pomegranate Sumac Dressing
MoroccanThe tangy sweetness of garden fresh tomatoes pare well with the lemony tartness of Sumac and the fruity influence of Pomegranate Molasses in the dressing.
Ingredients (Dressing):
3 Tablespoons Moroccan Olive Oil or Argan Oil (for a hint of nutty flavor and aroma)
1 TBSP Pomegranate Molasses
2 TBSP Lemon Juice
2 tsp Sumac
Salt & Pepper to Taste
Whisk together.

Ingredients (Salad):
tomatoes - 2 medium size
cucumber
1/2 Preserved Lemon (rind only)
red onion
your favorite herbs (we used cilantro, basil and mint)
PREPARATION:
Cube the tomatos, cucumbers, preserved lemon (rind only) and onion into small cubes.
Chop the herbs into small bits to release their flavor and oils. Mix and add dressing. Bon Appetit!
